Preparation
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the vanilla extract.
- Pour half of the batter into the prepared pan, spoon a layer of strawberry jam, then add the remaining batter on top.
Baking
- Bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool slightly before serving warm or cold with tea or milk.
Notes
Serve warm or at room temperature, optionally dust with powdered sugar and top with fresh strawberries. Store in an airtight container for up to three days.
