Ingredients
  

Pastry Cream
  • 3 yolks 3 egg yolks
  • 80 g 80g of sugar
  • 80 ml 80ml of cream
  • 240 ml 240ml of milk
  • 2 tablespoons 2 tablespoons cornstarch
  • 30 g 30g butter
  • 1 teaspoon 1 teaspoon vanilla sugar
Dough
  • 1 egg 1 egg
  • 50 g 50g of sugar
  • 360 ml 360ml of milk
  • 380 g 380g of flour
  • 2 tablespoons 2 tablespoons of baking powder
  • 1/2 teaspoon 1/2 teaspoon salt
  • 30 g 30g powdered milk
  • 40 ml 40ml vegetable oil

Method
 

Prepare Pastry Cream
  1. In a bowl, whisk together the egg yolks and 80g of sugar until smooth.
  2. In a saucepan, heat 240ml of milk and 80ml of cream. Once warm, slowly whisk the milk mixture into the egg mixture.
  3. Add cornstarch and combine well. Return the mixture to the saucepan over medium heat, stirring until it thickens. Remove from heat, and mix in the butter and vanilla sugar. Let it cool completely.
Make the Dough
  1. In a separate bowl, combine 50g of sugar, 360ml of milk, flour, baking powder, salt, powdered milk, and vegetable oil. Mix until a dough forms.
Fry the Donuts
  1. Roll out the dough and cut into squares.
  2. Heat oil in a deep fryer, and fry the squares until golden brown. Let them cool.
Fill the Donuts
  1. Once cooled, fill the donuts with pastry cream using a piping bag.

Notes

Serve warm or at room temperature, dusted with powdered sugar or with fresh fruit. Store leftovers in an airtight container in the fridge, separated with parchment paper to prevent sticking.
