Ingredients
  

Main Ingredients
  • 1 can (20 oz) crushed pineapple, drained Make sure to drain the pineapple well.
  • 1 cup heavy cream
  • 1/2 cup powdered sugar Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
For the Crust and Topping
  • 1 cup crushed graham crackers
  • 1/4 cup melted butter

Method
 

Preparation
  1. In a bowl, mix softened cream cheese with powdered sugar and vanilla until smooth.
  2. In another bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. Add the drained crushed pineapple and fold until combined.
Assembly
  1. In a separate bowl, mix the crushed graham crackers with melted butter.
  2. In a serving dish, layer half of the graham cracker mixture, followed by the pineapple cream mixture. Repeat the layers.
Chilling
  1. Chill in the refrigerator for at least 2 hours before serving.

Notes

Serve chilled for best flavor. Adding a sprig of mint can enhance presentation. Store leftovers in an airtight container in the refrigerator for 3-4 days.
