Preparation
- In a bowl, mix softened cream cheese with powdered sugar and vanilla until smooth.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Add the drained crushed pineapple and fold until combined.
Assembly
- In a separate bowl, mix the crushed graham crackers with melted butter.
- In a serving dish, layer half of the graham cracker mixture, followed by the pineapple cream mixture. Repeat the layers.
Chilling
- Chill in the refrigerator for at least 2 hours before serving.
Notes
Serve chilled for best flavor. Adding a sprig of mint can enhance presentation. Store leftovers in an airtight container in the refrigerator for 3-4 days.
