Ingredients

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • to taste cooking spray or additional butter for the pan

Method
 

Preparation
  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix together buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; it's okay if there are a few lumps.
Cooking
  1. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
  2. Pour small amounts of batter onto the skillet to form mini pancakes.
  3. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  4. Repeat with remaining batter.
Serving
  1. Serve warm with syrup, fruits, or toppings of your choice.

Notes

For an extra treat, adding whipped cream or chocolate chips can make them even more fun. Make sure not to overmix the batter; a few lumps are fine for fluffiness. Adjust the heat to low if they are browning too quickly.
