Crockpot Angel Chicken

Ingredients
  

Main Ingredients
  • 2 pounds Boneless, skinless chicken breasts or thighs Use similar-sized pieces for even cooking.
  • 8 ounces Cream cheese Full fat for the smoothest melt.
  • 1 tablespoon Butter
  • 1 packet Italian dressing seasoning mix (dry)
  • 10.5 ounces Cream of chicken soup
  • 1/4 cup Chicken broth Just a splash to loosen the sauce.
Optional Ingredients
  • 1 clove Minced garlic
  • to taste Black pepper
  • a pinch Red pepper flakes For added heat.

Method
 

Preparation
  1. Lightly grease your slow cooker for easier cleanup.
  2. Add the chicken in a single layer if possible and sprinkle a little pepper over the top.
Mixing the Sauce
  1. Add the cream cheese in chunks, then spoon in the cream of chicken soup.
  2. Sprinkle the Italian seasoning mix over everything, add the butter and pour in a small splash of chicken broth.
Cooking
  1. Cook on LOW for about 4 to 6 hours or HIGH for 2 to 3 hours, but LOW is recommended.
Finish
  1. Once cooked through, use two forks to gently break up the chicken or leave it whole, and stir well to smooth the sauce.
  2. If the sauce is too thick, add more broth, if too thin, let it sit uncovered for a few minutes to thicken.

Notes

Serve with something that soaks up the sauce, like pasta, rice, or mashed potatoes. It also pairs well with a simple green side like salad or steamed vegetables.
