Preparation
- Preheat your oven to 400°F (200°C).
- In a saucepan, combine water and butter and bring to a boil.
- Once boiling, stir in flour until the mixture forms a ball.
- Remove from heat and let cool slightly.
- Beat in eggs one at a time until smooth.
- Pipe the dough onto a baking sheet in 4-inch lines.
Baking
- Bake for 20-25 minutes until puffed and golden.
Filling and Drizzling
- Meanwhile, whip the heavy cream until stiff peaks form.
- Once the eclairs are cool, slice them open and fill with whipped cream.
- Melt chocolate chips and drizzle over the filled eclairs.
- Serve and enjoy!
Notes
Store eclairs in an airtight container in the refrigerator for up to 2 days. Fill eclairs just before serving for the best texture. Don't open the oven door while baking to prevent collapse.
