Ingredients
  

Pastry Ingredients
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
Filling and Topping Ingredients
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a saucepan, combine water and butter and bring to a boil.
  3. Once boiling, stir in flour until the mixture forms a ball.
  4. Remove from heat and let cool slightly.
  5. Beat in eggs one at a time until smooth.
  6. Pipe the dough onto a baking sheet in 4-inch lines.
Baking
  1. Bake for 20-25 minutes until puffed and golden.
Filling and Drizzling
  1. Meanwhile, whip the heavy cream until stiff peaks form.
  2. Once the eclairs are cool, slice them open and fill with whipped cream.
  3. Melt chocolate chips and drizzle over the filled eclairs.
  4. Serve and enjoy!

Notes

Store eclairs in an airtight container in the refrigerator for up to 2 days. Fill eclairs just before serving for the best texture. Don't open the oven door while baking to prevent collapse.
