Preparation
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the wet ingredients: milk, vegetable oil, and eggs.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Spoon the batter into muffin cups, filling them about 2/3 full.
- Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
These muffins can be enjoyed plain or with butter, jam, or honey. They pair well with coffee or tea. Store in an airtight container at room temperature for up to three days, or freeze for up to three months. Thaw at room temperature or microwave for a few seconds to reheat.
